Put carcass into crockpot, breaking it up as needed to fit. Cover with water, add all other ingredients, and cook on low for about 6 - 8 hours. If you prefer to have your veggies a bit on the crispy side, add to pot during the last couple of hours of cooking.

I make a habit of keeping home cooked beans on hand. I throw them in the crockpot, during slack times, with a minimum of seasoning (you don't know just what you're going to be using them in) and let them cook on low until they're done. Then I pour them into my cupcake tins, freeze them, take them out of there and put them all into a zipper bag. When I'm making soup, or stew or something, I don't have to go through the soaking, or boil wait an hour process. They are ready to use and waiting in the freezer for me.
