   NOTES : Cathleen's notes: I've only cooked catfish once, myself, and it was really yummy. I just used a simple blackening seasoning. Here's the recipe... the original called for a twice the amount of cayenne pepper, but I found it unpleasantly hot. Adjust it to your tastes.
